The Coffee


We love carrot cake from Butterfingers, a local spot in Munster that was conveniently and diabolically located next to the post office where we drop all the orders off (it closed recently, and we will miss it dearly).

There was always a particular spice flavor and smell that we’d get when chomping into the cake. Then we started to smell the same fragrance in our favorite pink bourbon lots. It’s a powerful association, and generally it dictates that said pink bourbon will be zippy, fresh, and stone fruit forward. We’ve chatted with other talented pink bourbon enthusiasts and buyers about this sensation. Intriguingly enough, a good friend and green buying/roasting superheroine mentioned “guava” as their signal that the coffee will fit their roasting styles and renditions.

We experienced our favorite fragrance sensation with this pink bourbon and gesha mixed lot from La Pradera. BOTZ has long been enamored with La Pradera’s style and processing. We’ve cited before that they expertly combine fresh fruit sensations with a unique candy sweetness (think gummies, baby bottle pops, and pop rock fizz).

With La Pradera lots, we love to “guess” the varieties' impact on the cup when we know the lot was a combination lot. We aren’t chemists, but we like to think creatively about variety synergy (in this case, pink bourbon and gesha). For this lot in particular, the two varieties are working in tropical tandem. In La Pradera style, we get a tropical Skittle mix sweetness with a bright orange marmalade acidity (like fancy ones from stands at Union Square’s Farmers’ Market). The finish of this coffee does have a soft and pretty guava pinkness to it that glitters as you sip (reminiscent of one of our favorite Pradera coffees ever…the Pretty Pink Princess, which was a pink bourbon and sidra mix).

The Roaster

Botz Coffee is a small micro roastery based in Munster/Whiting, Indiana, founded and run by legendary Danny Falloon.

Danny launched it in February 2020. The name comes from a childhood nickname his sister gave him (“Botz,” short for “brother” in Serbian). He buys green coffee in small quantities so the menu stays fresh and rotating, focuses on creative takes on familiar flavors, and aims for each coffee to deliver either warm nostalgia or a playful new experience.
